Yummy White Bean Chicken Soup


Making White bean chicken soup is super simple and yummy you can pair it with tortilla chips, or corn bread and rice or last just by itself. You can top it with cilantro, basil, onions , green onions or any favorite topping of choice. Perfect for winter or summer. This soup is yummy and filling. Making it is even more simple, you can cook it by crock pot, stovetop or pressure cooker. I used the stove so it could cook faster. If you are feeling extra lazy just buy a few cans of white beans, boil your chicken and herbs and you could have it done in under 30 min. So beneath I am showing the steps by pictures as to how I prepped my soup.
Be sure to presoak your beans over night to cut down on the cook time, if you dont do this it could take longer to cook unless you use pre-cooked can beans. 
these are my ingredients used along with chili powder, garlic, powder and salt a little avacado oil and tomato paste and last chicken, i used boneless for easy shreading.You may season according to your taste buds, but it is important to use the herbs 🌿  from up above to get the depth of flavor, but as always use according to what you have. 
combine everything in a pot and put enougg water to cover everything. Then season and bring to a boil you can even season after if you like.
When it is complete this is the finished product.

Recipe:
-2 breast of chicken
'3 cups of white beans
-1 can of tomato paste
-1 small pack of minced mushrooms ( using a chopper is easiest for the one that I used click here. ) 🙂
-1 minced onion
-7 basil leaves chopped
Fresh green onion chopped
-Pre-minced garlic about 2 table spoons
-Half a cup of cilantro minced
-half a lime
- 1 bell pepper
- salt to taste and optional Goya seasoning along with a teaspoon of chili powder and garlic salt.
Combine all ingredients in a pot with enough water to cover everything. Bring to a boil then cover and bring down to medium or low heat depending on how fast you want them done. If you opt for higher heat be sure to keep a close eye on them, making sure they have enough water. Once they have cooked for a few hours they will be complete. If you presoak your beans as I did they will cook faster if not it will take longer for them to be done. Lucky for us beans are one of those dishes that can be cooked low and slow and by dinner time our yummy meal is ready to go!:-)
